Australia's Skybury Plantation arabica will captivate anyone who enjoys a coffee with mild acidity, a rich body, and a distinctive flavor profile. You can enjoy the taste of spices (cinnamon, cardamom, pepper) combined with cocoa, caramel, nuts, and vanilla. The aroma is cocoa-like, and you will recognize sugarcane and spice.
Origins
The famous Skybury plantation can be found on the Atherton Tableland, a fertile plateau in northern Australia, in the Queensland district. The area includes the towns of Atherton and Mareeba and is adjacent to the Baldy Mountain Forest Reserve. It is supplied with water by the Barron River, dammed by the Lake Tinaroo irrigation reservoir. A series of volcanic eruptions formed Atherton itself, and although the volcanoes there are thought to be extinct, scientists have not ruled out the possibility of further eruptions.
The first European to visit the area was J. V. Mulligan in 1875, followed two years later by John Atherton, who settled there and gave one of the towns its name. Both men were brought here by nothing less than a desire for precious metals, namely gold and tin. Since 1880, tin has indeed been mined in Atherton. But we will return to Skybury, the pride of Australian artisanal coffee. It is about 10km from Mareeba, an hour's drive from Cairns airport. The plantation is owned and operated by the MacLaughlin family and is the oldest plantation in Australia. It lies altitude of 550-600m, produces around 150 tonnes of coffee annually, and employs fewer than a dozen people.
They plant the coffee plants to harvest them virtually all year round. A little bit is saved for the many visitors, to whom they can show the different stages of the growth of the bushes and the development of the coffee cherries. In addition, tourists can also visit the processing sites of the red cherries of the coffee plants. Skybury uses a unique and sophisticated process. The red cherries are peeled in water and then fermented in special tanks. That dissolves the pulp enveloping the seeds – coffee beans. Tourists are also introduced to the drying and packaging of green coffee (you will recognize the jute bags from Skybury quite easily, they are decorated with artistic prints). Elsewhere, they get a glimpse into the secrets of coffee roasting and can taste the perfect cup of the delicious drink. The barista will introduce them to the importance of grinding and extracting coffee and the different ways of preparing it. The tour ends with a screening of the film Coffee Dreams on a 6m curved screen.

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
