Instant coffee
Instant coffee was introduced to the American market in 1910, although the first patent was registered 29 years earlier in France. It became astonishingly popular during the American Civil War when the so-called Essence of Coffee was supplied to the Union army. It was a concentrated mixture of coffee, milk and sugar. Just pour hot water over a teaspoon of the mixture, and the "coffee" is prepared!
Fortunately, much has changed since those days. Today, instant coffee is a speciality, and the purity of its ingredients is what is valued. It should contain nothing more than an extract from a good quality coffee, usually a mixture of Arabica and Robusta. No wonder that every year it appeals to new coffee lovers who welcome it as a practical alternative to coffee beans. Instant coffee is most often sought after by young people and is most popular in Scandinavia and the UK.
Our suppliers produce instant coffee by what is known as freeze-drying. It is a more expensive and complex process than spraying, but at the end of the process, you end up with a coffee with excellent qualities. The green coffee beans need to be treated, ground and made into a strong, concentrated, syrup-like coffee extract. It is frozen in a thin layer in a vacuum at -40 ˚C. The water is evaporated by sublimation to produce high-quality granules that are perfectly soluble in water.
