Instant Freeze-dried Colombia Coffee has a medium acidity. The taste has notes of nuts and dark chocolate. Make sure to use hot water, not boiling, since that could impact your experience.

Origins

The story of Colombian coffee begins in the 18th century when coffee trees were brought to the country by Dutch missionaries. The first small plantations were established in the northeast, and eventually, farmers throughout Colombia began to cultivate coffee. The first-ever export of coffee beans from Colombia took place in 1835 and went to the USA.

At the beginning of the 20th century, the so-called haciendas, meaning large farms, were distributed among few owners. A few years later, however, the Eje Cafetero group was formed, bringing producers together and representing them on the global market. After the economic crisis, when many haciendas went bankrupt, the government decided to buy the farms and sell them off to the employees. Since then, there have been many small farms in Colombia that grow crops other than coffee.

The local coffee has a mild acidity and notes of chocolate, nuts and caramel. Thanks to careful processing, it has a wonderful aroma. The farmers pick the coffee cherries by hand, leave the loose green beans to ferment for 14-30 hours and then dry them.

How does such a harvest produce instant coffee? There are two possible ways, of which we prefer freeze-drying. First, the green coffee must be treated, then ground and made into a very strong brew. It must then be filtered and frozen at a temperature of approximately -40 ⁰C under reduced pressure. Sublimation produces tiny, shiny crystals of instant, or water-soluble coffee.

Instant coffee began to appear on the market around the middle of the 20th century. The ones made by freeze-drying (as opposed to spray-drying) retain maximum aroma and flavor, which makes them very popular. Just pour on hot water or milk.

Instructions for preparation

For best experience use a 90ml cup.
Add 1-2 teaspoons of coffee and cover with boiled water cooled down to 90°C. Using boiling water may negatively affect taste.
Always use fresh, clean water.
