Cezves
Use a coffee maker to prepare your coffee, and you will get a drink with an original taste and a strong flavour. The traditional metal vessel is now a handy choice for baristas and is popular in many households. It is said to have been introduced to the world by the Turks, but you can also find the cezve in the USA, Australia and elsewhere in Europe. If you want to indulge in a little coffee ritual, grind the beans very finely.
Pour it into a container and fill it two-thirds full with cold water. Bring to the boil, and when the coffee has formed a crust on the surface and begins to foam, remove the pot from the heat. Tap the jar gently until the foam subsides, and repeat the process twice. As you pour the beverage into the cups, the dregs will be trapped in front of the collar of the jug.
