The closest thing to coffee is cascara. It is the husks that encase the coffee cherries, which are carefully dried by the farmers. That way, they retain a wonderful fruity flavour and a bit of caffeine. You can (like the Ethiopians of old) pour hot water over them. Or use them to make iced tea. They always provide a drink rich in antioxidants and vitamins.
If you are looking for a coffee substitute, reach for coffee grounds. Their history dates back to ancient Egypt, and their popularity continues to grow. At a time when coffee was scarce, Europeans favoured various mixtures of roasted cereal beans, fruits or herb roots. One of the most famous coffee beans is chicory (roasted chicory root). Coffee beans are usually decaffeinated, so they can be drunk by people who are not into caffeine. However, some blends contain rare herbs with many properties, sometimes even stimulating.
A third ''coffee variation'' may be roasted malted barley. It has come to prominence mainly because of its vitamins, minerals and low glycemic index. Just pour hot water over it, and you have a pleasant, earthy-tasting drink with a nutty aftertaste. Manufacturers also add roasted barley to coffee beverages, which acquire delicious tones thanks to it.
