Chicory (Cichorium intybus) is a perennial plant belonging to the Asteraceae family. It has striking blue flowers and is native to Europe but has been introduced to America and Australia. Chicory leaves can be used in salads, while the roots can be cooked and eaten with butter. They contain inulin, a starchy substance with a mild laxative effect. The plant is also a rich source of beta-carotene. Among the approved health benefits of chicory is the promotion of normal heart and blood vessel function. As for chicory coffee, it is made by roasting, grinding and brewing chicory roots. The resulting product has a rich, earthy and nutty flavor. It has become a popular coffee substitute that is caffeine-free and can be used on its own or even mixed with coffee to complement its taste.
Spelt (Triticum spelta) is an ancient species of wheat cultivated since around 5000 BC. It was a vital food in Europe from the Bronze Age to the Middle Ages. Today, it grows as a rare crop in central Europe and northern Spain. Spelt has long, slender leaves and hollow stems with an ear that contains two bright red grains. Spelt is nutritionally valuable, containing phosphorus, magnesium and other vitamins and minerals.
Reishi has a characteristic reddish-brown to purple colour. It's a species of fungus that parasitises on dead deciduous trees and hardwood stumps. It has a glossy surface, to which it refers by its botanical name, Ganoderma lucidum. It is found in various Asian countries where it has many names such as Ling Zhi, Nam Linh Chi or Yeong Ji. Reishi is not eaten fresh because of its woody texture. However, it is commonly processed into an extract, dried to make tea or made into a powder. Reishi is a source of B vitamins and amino acids and has been valued by people for centuries, especially for supporting normal circulatory function and blood cholesterol levels.
