Spelt-Chicory Coffee with Brahmi has quite the unique flavor profile. Chicory brings a slightly bitter, earthy flavor similar to traditional coffee. The spelt adds a mild, slightly sweet and nutty flavor and brahmi contributes a subtle bitterness.
Origins
Chicory coffee was a popular coffee substitute in the past, especially during wars and food crises when real coffee was unavailable or too expensive. Chicory (Cichorium intybus) is a plant of the Astraceae family, which includes 7 species of perennial, less commonly annual or biennial herbs with blue, white or pink flowers. It is native to Europe, western and central Asia and northern Africa but has gradually spread to all continents thanks to man. In addition to replacing coffee, chicory is also used as a spice or vegetable. Today, chicory is cultivated for a variety of purposes, including the production of high-quality extracts for people who prefer a healthy diet.
Spelt (Triticum spelta) is a type of wheat cultivated as early as 8,000 years ago by the Egyptians, Celts and Germans. Over time it has given way to more profitable type of wheat, but today spelt is considered a preferable alternative. It has a nutty flavor and is widely used in cooking. In terms of nutrients, spelt contains small amounts of calcium, selenium and vitamins B1, B6 and E, large amounts of carbohydrates, and is also a great source of dietary fiber. Unlike common wheat, which is stripped of its germ and husk before being ground into flour, spelt contains more vitamins and minerals.
Brahmi (Bacopa monnieri) is an important Ayurvedic herb characterized by a small, creeping, perennial stem with many branches and elongated, relatively thick leaves. This herb thrives in natural wetlands, shallow water and moist, muddy banks. People value it for its many active constituents such as alkaloids (brahmin, narcotine, herpestine), mannitol, hersaponin, bakaposide, cucurbutacin, and triterpenoid saponins. Brahmi plays a special role in this chicory coffee – it promotes mental health, concentration and memory, and contributes to the normal function of the circulatory system and gallbladder.
