Origins
Spelt is an ancient species of wheat that was cultivated as a food thousands of years ago in the Middle East. According to archaeological findings, however, the history may reach even to the prehistoric times. In ancient and medieval times, thanks to its resistance to harsh conditions, spelt was also popular in Europe, where it formed a crucial part of the diet across all sections of the population. With the advent of modern agriculture, however, it was gradually replaced by more profitable cereals that were more efficient. Nowadays, its cultivation is coming to the fore again, thanks in particular to the growing interest in healthy eating and ecology.
Spelt became popular as a substitute for coffee around the 18th century, thanks to king Frederick II of Prussia. At the time, coffee was costly due to high tariffs, and the king was looking for a more affordable alternative that would be closer in taste to traditional coffee. Spelt coffee produced by roasting spelt grains became a popular substitute for traditional coffee, valued for its unique taste and characteristics. It contains carbohydrates, protein, fiber, vitamins E and B-complex and a range of minerals such as selenium, zinc, calcium, magnesium, iron and manganese, which are vital for the proper functioning of the body. The absence of caffeine makes spelt coffee ideal for everyone, including those who want to limit their caffeine intake but do not want to give up their favorite coffee ritual.

Instructions for preparation
