Colombia Supremo Medelin is described as silky and suitable for all-day sipping. The hallmark of a 100%, properly extracted Arabica is a thin and even crema with no big bubbles. In addition, this coffee has an acidity that is tastefully combined with chocolate and fruity undertones. It is strong, with a full body of flavor.
Origins
Colombia is one of the world's largest producers of plantation coffee. Over half a million small farmers tend to vast plantations from the Andes to the Cordillera. They grow coffee in the lowlands, at the foot of the hills, but coffee is also grown quite high up in the mountains. This is why Colombian coffee can have very different flavour nuances.
Medelin is an agglomeration in the Aburrá valley, located in the central region of the Andes mountains. There, a small family business – Villa Maria – specializes in the production of coffee of exceptional quality. The yields of the small plantation are not staggering, but the quality is undeniable and well known among all the world's roasters. The coffee cherries (Coffea arabica) are harvested in the second half of the year, from September to December. After being hand-harvested, they are processed using the so-called washed method, whereby they are placed into water (the poor quality cherries are taken from the surface, the rest sink to the bottom), and pressed through crushing plates (to remove the pulp and skin) and then, fermented. At the Villa Maria farm, the coffee is fermented overnight. Then it is dried on terraces, and finally the drying process is finished in special dryers. The farm is recognized for its individual approach to each harvest, but also its commitment to the environmental protection.
Because it is located in an area of exceptional biodiversity, the farmers have purchased the surrounding land, which they do not farm, but preserve the untouched nature for the future.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
