Super delicate, extremely fragrant and chocolatey sweet. Coffee from the popular Brazilian plantation Fazenda da Lagoa – Farm by the Lake – is one of the most sought-after in the world. It ripens in the open arms of a rainforest, surrounded by mountains and crystal lakes. We roast it at medium intensity to preserve its perfect smoothness and fruity aroma.

Origins
A century-old farm among the green hills manages 220ha of coffee plantations. At an altitude of 950-120m, the arabica coffee trees (Coffea arabica) have excellent climatic and soil conditions. Surrounded by fruit trees, they absorb the fresh scent of nature and the aroma of the sweet fruit.
The coffee plants are harvested from the fourth year onwards, but do not produce a full crop until the seventh or eighth year.
The harvest either takes place once or throughout the growing season. The first option guarantees the harvest of the ripest fruit and therefore the best quality coffee. Brazil Yellow B. Fazenda da Lagoa is hand-harvested, sorted and dried just like that. The beans are processed using the wet method, which means that the farmers put the fruit into water – they separate the unripe and poor-quality cherries from the surface of the water and push the remaining seeds and water through special crushing plates. This removes the skin and pulp. The subsequent fermentation is strictly supervised because it has a major impact on the final taste of the coffee. Drying is carried out in two steps – first in the sun, then in drying ovens.

Instructions for preparation
- Grind your coffee according to your preferred method.
- Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
- Add your coffee and pour over with boiled water (95°C).
