Cuba Serrano Superior – Roasted Coffee

A smooth, sweet, full-bodied coffee that will appeal to both coffee explorers and seasoned caffeine experts. Cuba Serrano Superior contains less acidity than the high mountain varieties. It is characterized by a dark and distinctive taste of dark chocolate and caramel. As with all high-quality 100% arabicas, the crema is thick and compact when extracted correctly.
Origins
The Sierra Maestra is located on the southern coast of the island of Cuba. Its highest mountain (and the highest mountain in all of Cuba), Pico Turquino, peaks at the altitude of 1974m. The tropical and humid climate creates excellent conditions for growing coffee trees (Coffea arabica). The soil is rich in copper, manganese, chromium and iron, which gives Cuban coffee an exceptional flavor profile. The most common varieties found in Cuba are Bourbon, Typica, Caturra and Catui & Catimor.
Coffee trees are harvested by hand from July to December. Their red fruits the size and appearance of cherries are processed in a method known as wet processing or washing. Immediately after harvesting, they are poured into large containers of water. The good quality part of the crop sinks to the bottom, the rest is picked from the surface. Along with the water, the cherries are pushed through special crushing plates to remove the pulp. The kernels (coffee beans) are left to ferment, then dried in the sun and in drying ovens. Finally, the coffee is sorted and packed in jute sacks of 60kg.
Coffee trees appeared in Cuba in 1748. The coffee plantations are cultivated by families who own often only small pieces of land. They band together in larger companies to ensure a better market for their coffee. Each batch of Cuban coffee has a clear and proven history. The country exports 8,000 tonnes of it a year. Cubans love coffee, brewing it in thermoses, flavoring it with sugar and taking it with them. You can only get coffee with milk in Cuba's better hotels, since the locals drink it only sweetened.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
