Origins
There are many legends about the origin of spelt (Triticum spelta), including one that says spelt was given to humans by the goddess of the harvest. It's an ancient kind of wheat cultivated in Asia since prehistoric times and is thus considered one of the oldest cereals. Unlike other wheat, spelt has the advantage of containing less gluten, which is also easier to digest than the gluten in regular wheat. Despite its long history, spelt has remained in the background for centuries, overshadowed by other, more familiar cereals. Today, spelt cultivation is again coming to the forefront.
Spelt has been known as a substitute for coffee since the 18th century when King Frederick II of Prussia encouraged its development. At that time, coffee was costly due to high tariffs, and King Frederick was looking for an affordable alternative that would still taste like coffee. Spelt coffee, obtained by roasting spelt grains, thus became a caffeine-free substitute for traditional coffee, valued for its unique properties and rich taste. It's a source of carbohydrates, protein, fiber, vitamin E and B-complex, and many minerals needed for vital bodily functions. Since it's caffeine-free, spelt coffee is ideal for everyone, including those who are trying to reduce their caffeine intake but don't want to give up the taste.

Instructions for preparation
