Lighter roasting gives Bolivia AA a more intense and lively character. The taste brings forth juicy notes of citrus that may remind you of orange zest. These are followed by the mellow notes of dark chocolate as well as a refreshing touch of mountain pine needles. The higher acidity gives an elegant impression and makes the coffee energizing as well as comprehensive. Brewing this coffee on filter will cause it to gradually open up new dimensions – from fruity freshness to mild sweetness to a lasting, slightly syrup-like finish. The result is a complex and comprehensive coffee that will give you something new in every sip.

Origins

Bolivia is still establishing itself on the market as a producer of high-quality coffee. Still, the mostly poor local farmers are off to a great start. They benefit from the ideal climatic conditions of the coffee plantations as well as from forming larger cooperatives and participating in economic development and fair trade projects.

Coffee plants are grown by small-scale farmers primarily in the rural regions of Yungas, Santa Cruz, Beni, Cochabamba, Tarija, and Pando. They typically own plots ranging from 1 to 8 hectares and mostly cultivate the arabica variety. Currently, there are 28 private companies that account for more than 70% of Bolivia’s coffee exports. The remaining part is supplied by 17 coffee cooperatives. Most Bolivian coffee is exported to the United States, Germany, the Russian Federation, and Japan.

Of course, the final quality of the coffee is significantly influenced by how it's harvested and processed. We should note that in Bolivia, no industrially produced chemicals are used to promote growth or increase the coffee plants’ resistance to pests. For this reason, the coffee grown there can be described as organically grown. Once the coffee cherries are hand-picked (between July and November), they're placed in large tanks filled with water. Farmers press them through special crushing plates, which remove the pulp and release the coffee beans. These are left to ferment and then dried in direct sunlight.

Available sources indicate that Bolivia ranked 33rd among coffee exporters in 2014/15. Its production accounted for less than 1% of the global market, and more than 23,000 families depended on coffee cultivation.

Instructions for preparation

  1. Grind the coffee according to your preferred method.
  2. Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
  3. Add your coffee and cover with boiled water (95°C).
