But for a few years now, things have been different – local cocoa farmers and cocoa processors have taken it upon themselves to bring genuine Ugandan chocolate to the market. Its bold in flavor with a touch of spice and contains a full 78% cocoa, taking an incredibly long time to melt on the tongue. Stir it into your milk, or add it to desserts.

These chocolate chips are perfect for melting in warm dairy or non-dairy milk. They can also be stirred into porridges, used in desserts or combined with alcoholic drinks.
Origins
To find Uganda, we would have to wander to the eastern part of Africa. It is usually visited by tourists because of Lake Victoria, the second largest lake in Africa, and its breathtaking, still wild nature. The presidential republic was named the pearl of Africa by Winston Churchill in 1908. And to this day, tourists rarely come across such beautiful national parks and friendly people as from Uganda.
In the very west of Uganda lies Bundibugyo – an area in 900m altitude level bordering the Democratic Republic of Congo. The population is around 160,000 and many of them devote their efforts to cocoa farming. Bundibugyo is the largest cocoa producer in Uganda. "Only good chocolate is born from our commitment and experience," says the company on its website, which oversees production, safety and supplier-customer relations for everyone involved in local chocolate production in Uganda. Similarly to Latin America, Uganda has introduced the latest technology, allowing farmers to cultivate and process the unique cocoa bean harvest. Chocolate from Uganda can safely match the high-end products of much larger producers.
In very simple terms, chocolate is made by removing the seeds from the harvested cocoa fruit, fermenting them for a few days and then drying them. In the factory, the beans are roasted, crushed and ground. A highly complex process produces cocoa mass from which cocoa butter and cocoa powder are separated by machine. To make chocolate, several other ingredients must be added in varying proportions and they must be emulsified, kneaded, whipped, tempered and cooled to produce the final product.
