Colombia Excelso Swiss Water Decaf coffee can be classified as a sweet variety. Its acidity is light and fresh, so the drink is pleasantly refreshing. It is, therefore, easy to detect other flavors, such as chocolate, fruit, and herbs. Because it is 100% arabica, the crema is light and smooth.
Origins
The country of Colombia smells and tastes like coffee. You can get it on the street, you can get it on farms. One of the world's biggest producers lies on the Eje Cafetero – so-called coffee axis – so it is no wonder the coffee plantations there are thriving. In the Pedregal region, mainly small farmers look after them. The result is juicy, layered coffee, often with chocolate and caramel flavors.
The first coffee trees were planted in Colombia in the early 19th century. The priest Francisco Romero is considered one of the pioneers and promoters of the crop. Today, the National Federation of Coffee Growers of Colombia, founded in 1927, takes care of exports as well as cultivation, research, and development in production. The Federation has become famous for its marketing campaign, which, with the Juan Valdez character, seeks to distinguish 100% Colombian coffee from that which is blended from beans from several countries. The trademark, featuring a farmer carrying coffee on a mule, first appeared on television in 1983.
Growing, harvesting, and processing coffee berries is, of course, only one part of the process that results in caffeine-free beans. Still, let us pause for a moment. In Colombia, coffee trees are harvested from March to June and from September to December. Workers pour the red coffee fruits into vats of water and push them through crushing plates. It removes the top skin and some of the pulp surrounding the beans. The intermediate product goes into barrels in which the coffee ferments (again in water) for several hours or days. The remaining pulp is completely dissolved during the natural fermentation process, and the green coffee beans are released. Finally, the coffee needs to be dried well – either in ovens or in direct sunlight.
How does caffeine-laden arabica become great decaffeinated coffee? In this case, a certified Swiss Water process was used. The so-called Swiss Water method involves soaking green coffee in hot water, where it remains for approximately 10 hours. However, the water constantly flows through the device equipped with activated carbon filters. The caffeine is thus gradually extracted from the coffee until the green coffee contains less than 0.01% of caffeine. Without chemicals and unnecessary waste, so the water can be used to irrigate new coffee plants, the coffee is almost free of caffeine. People with high blood pressure as well as pregnant and nursing women can enjoy it without worries. Enjoy it calmly in the afternoon, it will not disturb your sleep schedule.

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
