Sweet and velvety smooth, always freshly roasted, fruity and aromatic – that's Antiqua San Juan. It combines notes of peach, plum and apricot. The coffee is not overly strong, the low acidity makes it smooth and delicate. After a sip, it gives a pleasant fruity aftertaste. The crema is thick and elastic.
Origins
Coffee in Guatemala is usually grown at higher altitudes, often on volcanic soil. This gives it unique flavour characteristics. La Antiqua is an area in the central highlands of Guatemala, now a UNESCO World Heritage Site. It is surrounded by three volcanoes whose mineral-rich ash both benefits agricultural crops as a natural fertilizer and retains moisture in the soil. Coffee production in Guatemala began to develop after 1850. Coffee plants (Coffea arabica) grown at higher altitudes must be protected from the cold northern winds. Most of the plantations belong to smaller farmers who are organized in the national coffee association, Anacafé. As a result, there is control over the quality of the coffee produced in Guatemala as well as of the farmers' working conditions. In the Antiqua region, the cherry-like fruit of the coffee plants is harvested from January to mid-March, almost continuously. Workers go to the plantations every day to harvest the freshly-ripe fruit. Wet processing method means that the cherries are placed into tanks of water, where the good-quality fruit is separated from the poor-quality fruit, which sinks to the bottom. The high-quality cherries are passed through crushing plates which remove the pulp along with the water. This is followed by fermentation and drying. Finally, the coffee beans are sorted and then packaged.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
