Guatemala Geisha arabica boasts a balanced flavor and pleasing acidity. One can discern the delectably sweet notes of cocoa and walnuts in the beverage. A smooth, light crema is produced when prepared in a lever coffee machine.
Origins
In Central America, Guatemala is nestled between Belize, El Salvador, Honduras, and Mexico. The San Marcos region of Guatemala is situated in the southwestern part of the country, a detail that hints at the natural conditions of the area where the Finca Nueva Granada farm lies. Part of it borders the waters of the Pacific Ocean, while the remainder is irrigated by rivers like El Suchiate, Cabuz, Naranjo, and several others. The area offers the 60m high waterfall on the Cutzulchimá River and the Manchón Guamuchal Biological Reserve for nature-oriented tourists.
San Marcos has a temperate climate, being warm in the south and cooler in the north. Snow is often found in the mountains, which rise to altitudes of over 3,000m. The soil is naturally fertile due to volcanic activity that enriches it with minerals.
Although one of the smaller coffee farms, the Finca Nueva Granada is known for its meticulous daily care for the coffee, ensuring a high-quality harvest. Despite the farm's modest size, its reputation and tradition are considerable. Tucked between Guatemala's largest volcanoes, Tajamulco and Tacana, the coffee trees thrive amid the lush greenery and absorb nutrients from the volcanic ash-laden mountainsides.
The farm is filled with an intoxicating aroma during the blooming period in March and April. As the months pass, the blossoms develop into fruits that slowly ripen under the canopy of surrounding trees. As soon as the coffee cherries turn brown (usually in October), workers venture into the plantation. They handpick only the perfectly ripe cherries.
The farm utilizes its spring water for processing. The coffee plant fruits are stripped of their skin by a process known as pulping. They are immersed in water and pressed through crushing plates powered by a hydroelectric plant. Following fermentation in special tanks, the coffee is dried on terraces and in dryers.
Finca Nueva Granada has received full certification from the Rainforest Alliance. It provides comprehensive comfort for its workers and is energy self-sufficient. Furthermore, it takes responsibility for water resources, using 80% less water than usual in coffee processing and recycling wastewater for irrigation.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
