Benefits of cinnamon
Can you feel it? It is the smell of Christmas. That is what comes to mind when you smell a pinch of cinnamon. The second most popular spice in Europe (after black pepper) simply overwhelms its rival in taste and is second to none in health benefits.
Everyone is familiar with cinnamon. But did you know that the one you find on store shelves is probably not the real thing? There are two types - Ceylon and Chinese. The Chinese (or Cassia) variety is commonly found on the shelves. Unfortunately, it is like many 'knockoffs'. It has a similar taste and smell, and you might even notice some health benefits, but none of these are as intense in degree and quality as real cinnamon. And that is only Ceylon cinnamon. It is a rare spice, but the price is higher. But once you taste it, you will not want the bland Chinese version. Especially since, unlike cassia cinnamon, it does not contain as much of the controversial coumarin, which can damage the liver in larger doses.
Cinnamon is the dried bark of the Ceylon (or Chinese) cinnamon tree, which naturally curls into the typical rolls. Its distinctive flavour and aroma immediately take over any dish or drink you add it to. But with its spicy sweetness, the domination is more than pleasant.
You can often find it in ground or crushed versions and its use in gastronomy is dizzying. However, it should be handled with care by pregnant and breastfeeding women, and if you have liver problems or diabetes, you may prefer the Ceylon variety.
