Origins
Wayanad, a picturesque district in the northeastern part of Kerala, India, is the birthplace of this robusta coffee. Its economy relies heavily on agriculture thanks to its scenic bodies of water, towering hills, and abundance of wildlife. Coffee (and tea) dominate local agriculture, supplemented by crops like cocoa, pepper, vanilla, rice, coconut, cardamom, and ginger. The intertwining of coffee plantations with fruit trees and spice gardens contributes to the unique aroma reflected in the coffee's taste and smell. A striking aspect of this robusta coffee is its organic cultivation. Grown and harvested without industrial fertilizers or sprays, it ensures a clean and pure flavor free from potentially harmful residues. The wet method, or washing, is utilized in processing. It involves soaking the coffee cherries in water and pressing them through crushing plates, followed by fermentation and drying in tumble dryers or under the sun.
Coffee cultivation in India dates back to 1670, with the first plantation established around 1840. Formerly focusing on arabica, Indian growers switched to robusta following a coffee rust epidemic that devastated arabica plants. Supervision of plantations and export quality have been overseen by the Coffee Board of India since 1942. Nowadays, about 250,000 farmers participate in coffee cultivation, with 98% being local farmers. Indian coffee holds approximately 4.5% of the global market, exporting mainly to countries like Germany, Russia, Spain, Italy, and Belgium. Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
