Origins
Located about 200km from Lima, the capital of Peru, lies the Chanchamayo Valley. The name is said to be derived from the Quechua word, which can signify something akin to walking fast or jumping. A river bearing the same name meanders through this area, has a population of about 140,000 inhabitants, and is home to the provincial capital, La Merced. Furthermore, every tourist guide will tell you that Chanchamayo is renowned for its citrus and coffee. It accounts for approximately 40% of Peru's total coffee production. Arabica coffee plants, specifically of the Typica variety, are cultivated at altitudes around 1,500m. They typically grow in the shade, resulting in coffee with a pleasant, multi-layered flavor. While Typica does not yield as much as other varieties, it produces an attractive and sought-after crop. Coffee plants in Peru are harvested from June to mid-September. The red coffee cherries are sorted and processed, typically through washing. The skin and pulp are mechanically removed in water before fermenting in vessels, and finally, the green coffee beans are dried.
Peru Pichanaki coffee is cultivated, processed, and marketed by the Agroecólogica Cafetalera Pichanaki cooperative. Established in 2007, this cooperative currently unites over 300 farmers on more than 2,000m2 of land. The organization has Fair Trade certification, ensuring that its coffee is of exceptional quality and provides farmers with fair purchase prices and adequate working conditions. Fair Trade enterprises also commit to business sustainability and environmental respect. Consequently, Chanchamayo coffee beans are not only a source of delightful beverages with a unique flavor profile, but they also provide a fair income for many Peruvian families. Most coffee is exported to the UK, Denmark, France, Italy, Sweden, and Finland.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
