Coffee from Chiapas, Mexico, is grown in the shade. Most often under banana trees or tall pine trees, so it takes longer to ripen. But the coffee trees are more resistant to pests and the landscape retains the water it needs. Organically grown, with respect for the environment and biodiversity of the hills of Chiapas. What's more, it supports the local community. It's sweet, full-bodied, slightly reminiscent of apricots.

Mexico Chiapas has a very balanced body and a subtle fruity flavor. The acidity is distinct, but not strong, and the aroma stands out for its smoothness and freshness. The coffee is roasted only medium to retain all the desired notes.

Origins

Chiapas is a region found in the very south of Mexico. It borders directly with Guatemala, so it's not surprising that it shares many similarities with it. Coffee from both countries is mild, fruity and slightly nutty. Its cultivation in the hilly terrain also has similar characteristics.

Each cup of fragrant coffee could tell its own unique story. The small farmers who plant on the slopes of the Sierra Madre de Chiapas in the Cordillera range have to face not only a rapidly changing climate but also an unstable social situation. Farmers from the Mexico Chiapas region usually organize themselves into cooperatives.

This helps them to buy land and invest in technology. Most often they grow arabica, in the case of this coffee, the Caturra variety, a mutation of Bourbon. It has high production and high quality. However, it requires extremely careful treatment and fertile soil.

Mexico Chiapas has been grown without the use of fertilizers or chemical treatment. The harvest takes place from September to January. The coffee cherries are processed by washing and the beans are then dried and sorted.

Mexico is the fifth largest coffee producer in the world. The Chiapas region, with its humid tropical climate, has been settled by many European farmers. We can find Germans, French and Italians among these farmers. The third generation of modern coffee farmers numbers 80 families.

More sparingly roasted coffee offers a richer and more complex flavour profile. It retains more authentic nuances specific to the growing region, including fruity, floral or nutty notes.

In particular, quality coffee roasted to its ideal profile may contain higher levels of antioxidants such as chlorogenic acid and other phenolic compounds. These substances have anti-inflammatory and antioxidant effects. Unroasted premium coffee is also gentler on the stomach, as it contains fewer acids that can irritate.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
