Cocoa farming provides a livelihood for hundreds of thousands of families. And they can be extremely proud of their produce – the cocoa and chocolate from this beautiful island country is among the finest in the world.

Papua New Guinea 37% Chocolate Chips have a delicious, milky flavor with a sweet and very pleasant cocoa note. Accentuate their harmony and melt a few of them in hot soy, almond or poppy seed milk.
Origins

Papua New Guinea welcomes you with an equatorial climate, stunning scenery and friendly people. The coastal state in Oceania is considered one of the most colorful on Earth. Rare species of plants and animals inhabit its tropical rainforests. Papua New Guinea is 93% forest, with only 1.1% being arable land. Mineral extraction is essential to the country's income. Despite this, 80% of the population survive off agriculture, specifically bananas, coffee, coconuts and cocoa trees.
Yields from both cocoa and coffee plantations have declined over the past few years. Reasons cited for this include inadequate planting of new plants, disease infestation of cocoa trees and poor infrastructure. Therefore, in 2014, the World Bank approved financial support for small-scale coffee and cocoa producers who form cooperatives and work with NGOs.
Self-sustaining cocoa trees are evergreen trees native to South America. They grow to a height of 5-8m, bloom with pinkish-white flowers and produce yellow oval berries, up to 30cm long. The fruit grows straight off the branch or trunk. When they ripen, farmers have to cut them off with special tools.
Extracting the seeds – cocoa beans – isn't exactly easy. The tough and thick husk usually hides 5 chambers, each containing 4-14 seeds. They have to be removed, cleaned and fermented for a few days. Then comes the drying process. The beans are usually pre-roasted and taken to the factories. There, machines crush them, roast and grind them. From the resulting cocoa mass, cocoa powder and cocoa butter are separated.
Chocolate is then made from the powder by adding cocoa butter, sugar, vanilla, milk and other ingredients. The so-called refining process changes the consistency and texture. Mixing and kneading at a temperature of 50-65°C in a shell-like device is called conching. The chocolate also needs to be tempered and shaped.
Consuming good quality chocolate is good for mental and physical health. Chocolate is rich in antioxidants, vitamins (D, B, A, E) and minerals (sodium, magnesium, potassium, zinc, calcium, iron). Chocolate improves mood and helps relieve stress.
Papua New Guinea 37% Chocolate Chips are suitable for vegetarians. They contain 37% cocoa solids.
People with allergies to milk or cocoa should be careful. This product may contain traces of nutshells and milk.
