Origins
When it comes to the place where the cocoa beans for this chocolate were grown, we can be very specific. In the heart of the Peruvian Amazon rainforest, the Saavedra del Castillo family grows them. They are proud of their cacao trees, as they should. Anyone who has ever tasted the chocolate that is made from their fruits fully understands the farmers of Alto El Sol. It has a very intense and unique taste and it is a must for any lover of true chocolate.
The first drink made from cocoa beans was supposedly brewed by the Mayans in the 4th century. The possible predecessor to Peruvian chocolate was bitter, and it was several hundreds of years before the Native American recipe reached Europe. It is thought to have been brought to Europe around 15th century by Spanish colonizers.
We know the route of travel of this dark delicacy from the Mayans to Europe, but what about its production? It's not a simple matter. When the fruit of the true cacao tree (Theobroma cacao) is harvested, the cocoa beans need to be removed. The seeds, which are about 2cm long, have to undergo fermentation for several days before being dried and roasted. The next step is to grind them into cocoa mass, from which the cocoa butter and cocoa powder are separated.
It is the cocoa powder that is important in chocolate production. Different ingredients are added to the powder depending on the type of chocolate. Cocoa butter, sugar and sometimes vanilla and milk are also added. The resulting mass goes through a refining process, and it is mixed, kneaded, conched and tempered. The result is either a bar, chips or chocolate shaped into molds. Although chocolate is generally considered a treat best avoided, there are many reasons to indulge in high-quality chocolate. It is one of the foods with the most concentrated antioxidant content. These help the body fight natural ageing and changes to the DNA of cells. In addition, eating chocolate induces feelings of joy and helps to improve physical and mental performance.
