The Papua New Guinea Organic coffee is one of the more bold, fresh and fruity varieties. You'll recognize mango and citrus in it, with nutty undertones complementing it nicely. Behind the unmistakable taste and aroma are the trees and herbs that surround the coffee plantations. Because it's 100% arabica, it produces a smooth, light, compact crema in the cup.
Origins
The islands of Papua New Guinea lie in the northwestern Pacific Ocean. The whole area is called Melanesia ("black islands"). Coffee plantations are often in remote mountainous areas such as the Eastern Highlands Province. The so-called Eastern Highlands are accessible by the Kassam Pass, which offers a great view of the valley. Steep mountain peaks rise all around, with the province's 2 highest peaks (Mt Tableop and Mt Michael) reaching an altitude of over 3,600m. The region alternates between dry seasons and rainy seasons, which occur between December and April.
The region is characterized by meadows, bushland and, at higher altitudes, humid rainforest dominated by beech and pandanus (palm) forests. Above 3,000m, alpine meadows or moss forests are common. Papua New Guinea is characterized by a high diversity of fauna and flora. For completeness, the capital of the region is Goroka.
Papua New Guinea Organic coffee is sourced from farmers associated with Highlands Organic Agriculture Cooperative, an organisation of over 2,600 smallholder farmers that has achieved Fair Trade certification and invests heavily in business and community development projects. These ultimately benefit over 15,000 residents. HOAC members use traditional coffee processing methods. They manually remove the skin and some of the pulp and pour the loosened beans into fermentation vessels with water where they saty for 24-36 hours, and finally dry them on the so-called African beds or concrete slabs.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
