Origin of the coffee
Flores Island is one of Indonesia's 13,000 volcanic islands on the border of the Indian and Pacific Oceans. It lies east of the better-known and larger Bali and is less than 600 kilometres long. Some of the volcanoes are still active, and their lava is a source of minerals that benefit coffee plants. The nutrient-rich soil allows local farmers to grow and harvest organic coffee. That is to say, coffee that does not contain any residues of fertilizers or treatment products. In the middle of the island's highlands lies the Bajawa region, considered by tourists to be the most beautiful part of the island. Bajawa is known for its many festivals and cultural events. Many people head to the island for the traditional New Year's celebration or Thanksgiving festival every year. And not only them. The region offers the opportunity to explore the almost perfect natural beauty, hike to the tops of volcanoes, or take relaxing hikes to natural hot springs. On the island of Flores, farmers are mainly engaged in the cultivation of Robusta coffee plants. The bushes are planted at altitudes between 400 and 1000 metres and harvested between July and September. Following a tradition established by Portuguese settlers, they process the coffee cherries by washing them. They use ''peeling machines'' to remove the skin, which presses the fruit in water between crushing plates. Then, the coffee is fermented in fermenters, depending on the ambient temperature. Hot climates require only 8-12 hours of fermentation, while 3-4 days are needed in high mountains. The result is a bean with a distinctly fruity flavour and rich body. Flores itself does not have an international port. Therefore, the harvest travels to Java before being exported globally.

Instructions for preparation
- Grind the coffee to a coarseness appropriate for this type of preparation.
- Use 1.5-2 teaspoons (approx. 7 g) of ground coffee for each cup.
- Pour on water (95°C).
