Origins
You won't find any cocoa in these chocolate chips, yet they wouldn't have been made without cocoa beans. On the other hand, they are also free of the stimulants caffeine and theobromine, so you can enjoy white chocolate before bedtime.
Cacao trees have been cultivated in Madagascar since the early 19th century, with current plantations found mainly along the Bemarivo River in the northeast of the country and along the Sambirano River on the west coast. When the rivers drain, they bring highly fertile soil from higher ground, which is deposited on the banks and the cacao trees (as well as mango, banana, and other crops) thrive as a result. Unlike others, Madagascar's cacao trees bear fruit all year round. And although the island nation's yield covers just 1% of the global cocoa production, its cocoa is among the most sought-after in the world. It's the choice of top chocolate makers and renowned chefs alike.
It takes the work of dozens or even hundreds of hands to turn cocoa beans into cocoa, or even chocolate, let alone white chocolate. The harvesting of the cacao trees (Theobroma cacao) fruit itself is no simple matter. It's usually not possible without a machete. Farmers open the cocoa pods with a special knife to extract a few dozen cocoa beans. Even at this point, they can tell how good a crop they have harvested. The workers pour the beans into tanks filled with water and leave them to ferment for 2-5 days. After the cocoa beans go through a rather complex chemical process under the workers' watchful eye, they are dumped out into the sun and dried. They reach the buyers in jute bags that allow air to reach the beans.
Once the harvest arrives at the chocolate factory, the beans must be roasted and ground into cocoa mass. This is a demanding process with many crucial moments to watch. The cocoa mass is then separated from the cocoa butter and cocoa powder. When the final product is to be classic chocolate, they are mixed together in different proportions, with various other ingredients and at different temperatures. In the case of white chocolate, only cocoa butter is used. It is enriched with milk powder, sugar and other ingredients that characterise both its taste and its physical properties.
