The fruit of the coffee tree is not washed, as usual, but dried on the roofs of houses and then cleaned by hand. The coffee's flavour is layered and floral, with traces of chocolate, wood and incense. Even experts disagree whether this is due to the high altitudes at which the bushes grow, the little rainfall they receive or the ancient varieties of coffee trees. What is certain is that Yemeni coffee is one of the most highly rated and closely monitored.
