Origins
The San Martin farm in the middle of Brazil harvests a unique coffee from May to September. The 35-hectare plantation is farmed by the third generation of the family of Nelson Rivellini, whose Italian grandfather came to Brazil specifically to grow coffee. He started in Sao Paulo, then continued in Paraná. Today, the plantation in the Patrocínio microregion (Minas Gerais state) is thriving, as evidenced by the fact that it exports coffee to many countries worldwide. It is also a Cerrado Coffee Growers Association member, which guarantees high quality and clear origin of his coffee. Each variety receives a unique numerical code from the association, which allows the specific plantation to be verified retrospectively. The extensive tropical savannah determines the natural character of the microregion.
Summers tend to be humid and warm, winters dry and cold. The coldest month is usually July, and the hottest is January. It is no wonder that Patrocínio has become one of Brazil's most important coffee-growing areas. Over 3/4 of the local economy is linked to it, and the coffee industry employs 30,000 people.
The red cherries of the coffee plant are processed at the San Martin farm using a process known as semi-washing. It combines the advantages of dry and washed methods. The coffee is then referred to as semi-washed or honey. The whole process involves harvesting the coffee cherries and processing them with peeling machines that remove the skin in water. Up to this point, the process is the same as for washing. However, the coffee beans still coated in their sweet flesh are left to dry in the sun. When they are dried to the required degree, the workers remove the pulp, which forms a thin parchment on the coffee. This method of processing the coffee increases the intensity of its flavor, giving it pleasant fruity notes and nice acidity.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
