Origins
The seeds of cocoa trees grown in Peru and Ecuador produce chocolate chips of exceptional quality. In fact, South American production is among the most sought-after in the world. The cocoa beans ripen under ideal conditions, including partial shade, high humidity, high temperature and good soil. Of course, we cannot forget the constant care of the farmers. They have been planting and harvesting for generations.
Before we weigh and pack your Nougat Chocolate Chips, workers head out to the cocoa plantations. Because the coveted seeds are hidden in the large, hard fruits of the evergreen cacao trees, they have to use several tools and a lot of their strength to get them. Once they have removed the sweet pulp from the beans, they clean them and leave them to ferment for several days. The natural process of enzyme oxidation takes care of changing the color of the beans (from white to brown) and bringing out the cocoa aroma. The harvest, thus prepared, goes to the processing plants.
It is here that a natural raw material becomes the globally popular treat. The beans need to be ground and the resulting intermediate product is separated into cocoa powder and cocoa butter. The powder is used to make milk and dark chocolates are in another complex process, and the cocoa butter goes mostly to white chocolate. As you may have guessed, white chocolate is not exactly chocolate. Experts consider it to be a regular candy because it does not contain cocoa mass, and therefore does not contain the caffeine and theobromine that classic chocolate is very rich in.
This does not mean that white chocolate is inferior! Its consumption is steadily increasing, growing by an estimated 2% each year. White chocolate is available in premium quality. According to experts, it is the demand for high-quality gluten-free, vegan, organic white chocolate which will determine the trend of the entire market in the coming years.
Europeans have known white chocolate since 1936, and the current standards specify the content of each ingredient at at least 20% cocoa butter, 14% milk solids and 3.5% milk fat. When buying white chocolate, it is recommended to follow these parameters. Only high-quality products should be consumed.
