Cinnamon – Flavored Roasted Coffee

The base of this cinnamon treat is 100% Peruvian arabica. Many baristas seek it out for its rich body, low acidity, and balance. The coffee is very harmonious, naturally sweet to fruity. That is why the cinnamon aroma works so well with it. The crema is smooth but dense and cohesive.
Origins
Highland coffees are generally popular. This one grew on the slopes of the Andes in the Puno region, a few dozen kilometres from the famous Lake Titicaca. Coffee trees have the ideal climatic and soil conditions in the area and many local farmers focus on growing them. Because they tend to their plantations high up in the mountains with their families, it is inconceivable for them to fertilize their coffee trees with industrial products. Firstly, it is expensive, and secondly, it is difficult for the farmers to get anything extra to the plantation. The harvest from Puno is thus likened to coffee grown under organic farming.
The fruits of the coffee trees are harvested as they gradually ripen. Within 24 hours, they must be transported for processing, which in the Andes is done by washing. The entire harvest is soaked in water and pressed through special plates to remove the pulp. Then, the loose beans are placed in fermentation vessels for up to 36 hours. Fermentation takes place there. The last step is drying, either in direct sunlight or in drying ovens. Finally, the green coffee is sorted, packed, and taken to the market.
Our roaster flavors the coffee before roasting. He applies a carrier oil with a natural aroma to the coffee beans. Thanks to the sensitive roasting process, the aroma is incorporated into the coffee beans and lasts until they're ground.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
