You make it into a full-bodied and rich-tasting beverage with hints of not only rum, but also an attractive cherry note. This coffee is medium-acidic with an intensely intriguing aroma.
Origins
If you mention "Caldas," any Colombian patriot will recommend you their delicious coffee, but also beans, bananas, rice, and sugarcane. It is these crops that make the region in central-western Colombia so prosperous. But it is also the richest region in the country, thanks to the mining industry. Gold, silver, coal, and limestone from Caldas often travels worldwide. Before the conquest by Spanish colonizers, this area was home to indigenous tribes such as the Pijaos, Ansermas, Armas, Chamíes, and Quimbays, who were famous for their beautiful goldwork. In 1523, Sebastián de Belalcázar arrived in their territory, but Caldas did not take its name until 1905, after Francisco José Caldas. In 2011, the region was listed as a UNESCO World Heritage Site.
For coffee lovers, the most interesting parts of the region are the coffee plantations. Caldas lies on what is known as the coffee axis of Colombia. Together with the regions of Quindío, Risaralda, and Tolima, they produce the most high-quality coffee in the country. The earliest coffee plants were planted in Salazar de las Palmas, and during the 20th century, coffee became Colombia's primary export commodity. That is even though its cultivation initially met with resistance from farmers, who had to wait around five years for their first harvest.
The high quality of local coffee is thanks to the ideal growing conditions. The annual average temperature is 8-24°C. The soil is rich in minerals, thanks to its volcanic origin, and the Andean rainforest provides a pleasant microclimate for coffee plants. However, there is something else unique about the Colombia Barrique Rum Fermented profile. The secret of the harvest from the Finca San José farm lies in a few principles that guide the family business. First is the manual harvesting of the coffee cherries. Second is the careful sorting of the beans, and third is the fermentation of the coffee in rum barrels.
The current owner of the plantation, Mr. Guillermo Alvarez, is a representative of the third generation of Finca San José farmers. It was founded in 1963 and today covers 222 acres at an altitude of around 1,400m. To produce Colombian Barrique Rum Fermented coffee, it is necessary to harvest coffee cherries of the highest maturity. After sorting and washing, during which they are stripped of their skins, they are fermented in special tanks for 20 hours. During this time, the sweet pulp enveloping the seeds is dissolved. The resulting green coffee then needs to be dried, then sorted again by the workers and finally poured into wooden barrels where the rum has been aged for 8 years. Here the coffee ferments again, but this time for 3 months. During this time, it absorbs the lean notes of the rum while being enriched by the cherry aroma. Every 30 days, the farm's staff takes samples from this harvest and monitors whether the whole process is going as expected.
In short, Finca San José not only pays attention to its excellent coffee but also to sustainable development, environmental protection, equal social conditions, and the preservation of traditions in Caldas.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
