Light roasted Colombia Huila Rojas Estate Geisha Microlot excels with an incredibly lively and layered flavor profile. When dripped, it unfolds all of its juicy acidity reminiscent of limes and green apples underlined with papaya and subtle notes of almonds. The floral aroma, typical for geisha varieties, feels light, pure, and elegant. Thanks to the lighter roasting, the taste is extra authentic, with distinct fruitiness, lasting aftertaste, and light, velvety body.

When we say in the introduction that this coffee "has a pedigree", we’re not exaggerating in the slightest. So-called micro-lots are varieties grown in a single specific location, not blended from multiple harvests or plantations. With a microlot, you always know exactly where it was grown, so you can enjoy a unique flavor that comes solely from that specific plot of land. They're processed separately from the rest of the coffee on the plantation to highlight their special characteristics. That’s precisely why microlots are highly sought-after – but, on the other hand, they’re only available in limited quantities.

The El Bolsón farm, run by Eliécer and Elvia Rojas along with their five daughters and four sons, is located in western Colombia. The Huila region is mountainous and includes, for example, the country’s third-highest mountain – the Nevado de Huila volcano. Colombia’s largest river, the Magdalena, has its source in this area, where the Betania Dam is located. The coffee plantations stretch across an elevation of 1,450 to 1,650 meters and cover an area of 26 hectares. However, the farmers grow the Geisha variety on only 2% of this area – a total of 9,000 plants.

Let’s take a moment to focus on the Geisha. It's a specialty coffee variety native to the Gesha region of Ethiopia. The plant can grow up to 5 meters tall and yields its best harvest at altitudes above 1,400 meters. It prefers indirect sunlight, as direct light can damage its leaves. Geisha has become famous for its unique flavor profile and, consequently, its high exclusivity and selling price.

Colombia Huila Rojas Estate Geisha Microlot was harvested between October and November. Coffee trees in this region are harvested twice each year and the second picking happens in April and May. Because this is such a unique coffee, members of the Rojas family picked the red cherries exclusively by hand to remove any unripe or damaged fruit. They then poured the berries into mills, where a stream of water and grinding plates removed the husks and part of the pulp. The coffee beans, now free of their outer layers, were transferred to barrels of water, where they fermented for several hours. This process naturally dissolved the remaining pulp. The farmers then dried the so-called washed coffee in direct sunlight.

The El Bolsón farm is a member of the Cadefihuila cooperative and the Guacacallo Association. The shared goal of all members is to refine their cultivation and production processes so that the resulting coffee is of the highest possible quality.

Instructions for preparation

  1. Coarsely grind your coffee.
  2. Add coffee to a V60 filter in a ratio of 1g per 14ml of water.
  3. Using circular motions, cover the coffee in water (93°C).
