Their solidarity and diligence are admired by all their neighbours, and their coffee by all connoisseurs. The family of Mr. Eliécer Rojas runs an exemplary farm in the southwest of Colombia. Their Geisha with verified origin has a unique flavor profile with notes of apples, lime, papaya, and almond. The aroma is distinctively floral and sweet, making this exclusive coffee attractive to the senses.

Colombia Huila Rojas Estate Geisha coffee is inherently luxurious. The Geisha variety is known for its sweet taste, rich fruitiness, and floral notes. In this coffee, you will find a delightful combination of apples, papaya, and lime, complemented by bittersweet almonds. The floral, sweet aroma crowns the overall impression of the coffee. Because it is an arabica, you will experience a light, cohesive, and bright crema.
Origins
When we say in the introductory text that this coffee has a verified origin, we are serious. So-called microlots are varieties grown in one location, not sourced from multiple harvests and plantations. With a microlot, you always know exactly where it was grown, so you can enjoy the unique taste that comes only from that plot. They are processed separately from the other coffees on the plantation to highlight their special characteristics. That is why microlots are highly sought-after but, on the other hand, only available in limited quantities.
The El Bolsón farm, run by Eliécer and Elvia Rojas, is also home his 5 daughters and 4 sons, can be found in western Colombia. The Huila region is mountainous, including the country's 3rd highest mountain, the Nevado de Huila volcano. The area is the source of Colombia's largest river, Magdalena, on which the Betania dam is located. The coffee plantations are situated between 1,450-1,650m and cover an area of 26 hectares.
However, farmers grow the Geisha variety on just 2% of the area – 9,000 plants in total. We will pause for a moment with Geisha. It is an indigenous variety of coffee plants from the Gesha region of Ethiopia. The plant grows up to 5m and produces a bumper crop at altitudes above 1,400m. It does not like direct sunlight, which damages its leaves. Geisha is renowned for its unique flavor profile, high exclusivity, and selling price.
The Colombia Huila Rojas Estate Geisha microlot was harvested between October and November. Coffee plants are harvested once more in the region between April and May. Because it is a unique coffee, the red cherries are plucked exclusively by hand by members of the Rojas family to avoid unripe or damaged cherries. They were then poured into mills, where they were stripped of their skins and pulp using a stream of water and crushing plates. The coffee beans thus freed went into barrels of water, where they fermented for several hours. It allowed the remaining pulp to dissolve naturally. The farmers dried the washed coffee in direct sunlight.
The El Bolsón farm is a member of the Cadefihuila cooperative and the Guacacallo Association. The common goal of all members is to fine-tune cultivation and production practices so that the resulting coffee is as good as possible.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
