This decaffeinated roasted coffee offers subtle notes of almonds and panela complemented by a refreshing citrus note. The base is rich with hints of spice and cloves. The foam is creamy, yet full-bodied and stable, indicating perfect workmanship and the quality of coffee cherries. Thanks to the gentle decaffeination process, the crema retains its texture and gives the final cup a pleasant, aesthetic look.
Origins
Tolima is a region known for its diverse landscape and strong agricultural tradition. It is located on the western slope of the Colombian Andes, with a microclimate ideal for growing coffee. Thanks to its high altitude and good natural conditions, flavor of coffee from Tolima is easily distinguishable among other coffee varieties. The region is also renowned for experimenting with modern coffee processing methods, which contribute to the diversity and quality of local production with El Vergel being one of the perfect examples of these innovative ways.
The farm is run by the Bayter family, who only took up coffee farming after the disappointment of growing avocados when market prices fell. In 2009, they decided to expand their production to include coffee and began experimenting with different varieties. Today, the farm is known not only for its quality coffee, but also for its use of innovative fermentation processes that include methods such as aerobic and anaerobic fermentation. This particular coffee is made with Caturra beans, popular in Colombia for its disease resistance and flavor characteristics. On the Bayter farm, it’s grown at a high altitude of 1,450m, which provide best conditions for slow fruit growth and maximum concentration of flavor.
What makes this coffee even more unique is the use of the EA Sugarcane method for its decaffeination. Not only is it all natural, utilizing ethyl acetate by-products from sugarcane, but also extracts the caffeine carefully without any loss of the actual flavor. First, the coffee beans are wetted and then submerged in a mix of water and ethyl acetate, which binds with the caffeine, leaving the beans decaffeinated yet still flavorful and rich.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
