The Bourbon, Pacas and Pacamara varieties are typical of El Salvador. Bourbon is known for its sweet and balanced taste with a subtle acidity. Pacas, a natural mutation of Bourbon, offers similar characteristics. Pacamara, a hybrid of Pacas and Maragogype, is prized for its layered flavors and larger grain size. Salvadoran coffee is renowned for its balanced and delicate character which typically includes chocolate, caramel, citrus and tropical fruits.
It should also be mentioned that several coffee farms in El Salvador are committed to sustainable agricultural practices, using organic farming, shade growing techniques and organic compost. Coffee production has been a vital part of El Salvador's economy since the mid-19th century. Despite some challenges, including the civil war (1979-1992) and the coffee rust epidemic, the industry has focused on quality over quantity. Today, Salvadoran coffee is highly regarded in the speciality coffee market and often wins recognition in competitions such as the Cup of Excellence.

Instructions for preparation
Coarsely grind your coffee.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Using circular motions, cover the coffee with boiled water (93°C).
