Brew & Taste
Salvador SHG Washed Red Bourbon Finca Santa Adelaida is 100% washed arabica. Thanks to this (and the ideal conditions in which it was grown), it has an extraordinary flavor profile, which, in addition to a pleasant sweetness, includes notes of grapes, cocoa, and marzipan. If you taste it more carefully, you may also notice a touch of sweet paprika. This coffee delivers a smooth but cohesive crema.
Origins
A landlocked country in Central America, whose name translates to "saviour". That's Salvador, of course! From here, coffee with unique qualities has been exported worldwide for over a century. At that time, it was the source of half of all export earnings for the country. Salvadoran coffee exports peaked in 1980, bringing in $615 million. Coffee production fell during the civil war that hit the country immediately afterwards. Today, coffee revenues account for only 3.5% of GDP, affected not only by the dire domestic political situation but also by growing global competition in the coffee market.
Coffee plants in El Salvador are grown on shaded plantations. They occupy around 80% of the country's forests. Farmers there focus exclusively on growing arabica. The Santa Adelaida cooperative, whose plantations are located in the Balsamo hills, produces the Red Bourbon variety. The coffee plants grow at the foot of the San Salvador volcano, drawing plenty of minerals from the soil, the scent of vanilla, and the so-called balsam trees (balsam wood) from the surrounding forests. The surrounding trees always shade the plants.
Coffee grown this way has a higher sweetness and mild acidity. It is harvested in the area from December to February, and workers process it by washing it. First, the red coffee cherries are stripped of their pulp in large vats of water and then left to ferment in the water. Finally, the loose beans are dried in specialized drying rooms or spread out on concrete.
The Santa Adelaida Coffee Growing, Processing, and Selling Association was founded in 1980. Today, it has nearly 200 members and cares for its coffee plants according to the principles of organic farming.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
