Guatemala HB Swiss Water Decaf coffee is true to its origin. The predominant attributes of chocolate and hazelnut are typical of Guatemalan coffee as well as medium to rich body, notes of caramel, and bittersweet cocoa. In the case of the Chimaltenango harvest, an attractive trace of fresh wood completes the flavor. The crema is smooth and cohesive.

Origis

We will first deal with the HB mark in the name of this coffee: varieties grown at altitudes of 1,200-1,500m are referred to as Hard Bean. Why? Because of the slower maturation of the coffee, its beans are harder, and its flavor and aroma are more intense. These qualities make it a highly desirable coffee and generally more expensive than those grown at lower altitudes. Now we can turn to the place from which the Guatemala HB Swiss Water Decaf originates. The Chimaltenango region lies in the southwest of the country. Its eponymous capital was founded in 1526 on the foundations of an old Mayan fortress and soon became an important transport and trading hub.

The location is famous for producing bricks from its unique soil. Notable is the local colonial church built in 1854 on the so-called continental front. The water flowing from its fountain is directed from one part into the Atlantic Ocean and the other into the Pacific Ocean. The region has fertile soil, and the subtropical climate provides coffee farmers with consistent temperatures and ample rainfall. The coffee trees are harvested from November to April, and in the case of Guatemala HB Swiss Water Decaf, they are tended by farmers in El Pacayalito, a volcanically active area. After harvesting, the fruit is processed by washing and drying, usually in direct sunlight.

The coffee was decaffeinated using no solvents nor chemicals. Swiss Water's trademarked process works with the fact that caffeine is water-soluble. That is why they soak the green coffee beans in pure, warm water and run it through a charcoal filter. This traps the large caffeine molecules but lets through the aromatics, sugars, and oils that make coffee coffee. By circulating the water in a special device, the coffee is decaffeinated without losing its natural, rich, layered flavor.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and cover with boiled water (95°C).
