Benefits of sour cherry
Do you also sometimes feel that we are unfairly looking at the sour cherry tree through our fingers? They say it is a common tree, but it is that tangy sourness that gives food and drink the right kick. And if you ask a distillery, they sing its praises.
It is undoubtedly one of the iconic symbols of summer. Many of us can see our grandmother's shelves sagging under rows of jars of jam, marmalade and compote.
The origins of sour cherries can be traced back to south-eastern Europe, roughly in the area between Turkey and Russia. Over time (due to their great popularity) sour cherries have spread to other parts of the world. They are very popular in the USA and the UK, for example. It is even though their cultivation is quite complicated due to their susceptibility to weather and pests.
The tree is smaller than the cherry, with a showy crown of dark red stone fruits.
It ripens in a relatively short period, usually from late May to the end of September. After picking, the cherries must be processed quickly, which is why they are rarely available fresh in the shops. In the culinary world, fruit is the basic ingredient for many desserts, but the leaves can also be used in hot and cold drinks.
