Hot chocolate powder with 42% cocoa and a pinch of cane sugar tastes very delicious, warm and soft. Masala aroma gives it an attractive but unobtrusive note of a popular spice blend (cardamom, cinnamon, ginger, cloves, star anise, pepper and nutmeg).

Origins

As you sip Masala Hot Chocolate, your thoughts will be transported to faraway lands scented with wild flowers and foreign spices. But before that, we'll tell you where all the ingredients actually come from.

Cocoa is made from cocoa beans harvested and processed in the Dominican Republic. Most of the countries in the Greater Antilles archipelago are covered by mountains and the climate is tropical, with hurricanes sweeping through the area from time to time. The average temperature ranges between 16-30˚C. The soil is fertile, so it is not surprising that entire 20% of the population is engaged in agricultural activities. The most common crops grown are sugar cane, bananas, cotton, coffee and cocoa. The last one is considered one of the finest in the world. Much of the production comes from organic farming. True cacao trees (Theobroma cacao) are grown, harvested and their fruit processed without the use of fertilizers or chemical sprays. And this trend is becoming popular with an increasing number of farmers.

Cocoa trees in the wild grow to a height of 5-8m. But on plantations, they are maintained as larger shrubs. The evergreens have long leaves, hairy branches and flower in two waves each year. The flowers are pinkish-white and the fruit of the cocoa tree is a yellow berry, up to 30cm long, with long grooves on the surface. Inside, in the thick white flesh, are hidden 4-14 seeds: cocoa beans. It is from these that cocoa is produced, a commodity in demand throughout the world. It was indulged in by the rulers of the Aztecs as well as the noble court of the Spanish conquistadors of the Americas.

Paraguay is the second country to share in the deliciousness of hot cocoa. Its sugar cane is famous the world over. The landlocked country is often classified as a developing nation, the second poorest in South America. Almost half of the population works in agriculture. They mainly grow soybeans, corn, grain and also sugar cane (Saccharum officinarum). It grows to 5m and contains up to 20% sugar (sucrose, fructose and glucose) in the flesh of the stalks. Until the Middle Ages, cane sugar was unknown to Europeans. It is produced by pressing the cane and boiling the resulting liquid.

This mixture may contain milk residues, and lactose-intolerant people should consume carefully.

Instructions for preparation

Stir 30g of cocoa powder into 150ml of hot milk.
If you prefer a thicker consistency, mix cocoa powder with milk in 1:2 ratio.
