Origins
If there is a key crop for the Dominican Republic, it has to be cocoa beans. The Caribbean country, located on the island of Hispaniola, is one of the world's leading producers of organic cocoa. Since 2015, it has managed to export cocoa to the United States, the Netherlands, Belgium, Mexico and Spain, not only thanks to the efforts of nearly 40,000 farms, but also with the strong support of the local Ministry of Agriculture.
Let's add that there are approximately 150,000 hectares of land planted with cocoa trees in the Dominican Republic, of which over 17% is dedicated to the cultivation of organic cocoa beans. In addition, the Dominican Republic has been ranked as one of the 15 producers of gourmet cocoa in the world.
There is a long road from the cacao trees (Theobroma cacao) to hot chocolate. Cocoa beans as we know them are found in the heavy fruit of these evergreen trees. The elongated berries have to be cut from the trees, the seeds (beans) removed from their chambers, cleaned and processed. The raw beans are left to ferment for a few days, then cleaned again, after which they are dried. The next step is the machine cleaning, dehulling and conditioning of the beans. In the processing plants, the raw material thus prepared is ground to produce cocoa mass. The cocoa powder and cocoa butter are then separated.
In the case of cinnamon hot cocoa, organic cane sugar, which is produced by boiling the juice from the stems of the sugarcane (Saccharum officinarum), has been added to the cocoa powder. Finally, organic cinnamon flavoring was added. That is to say, a flavoring produced from natural cinnamon using physical, microbiological or enzymatic processes. The natural flavorings are completely safe and do not cause heartburn or other health problems.
This hot cocoa is suitable for older children, adults and seniors. Only lactose-intolerant people should be careful, hot cocoa may contain traces of milk.
