Hot cocoa powder with 42% cocoa and a pinch of cane sugar tastes very delicious, warm and soft. The ginger aroma gives it an attractive but unobtrusive note of a popular spice.

Origins

Cocoa from Dominican Republic, cane sugar from Paraguay, a touch of natural flavoring from Europe. All from the best suppliers and of the highest quality. But first things first.

The Dominican Republic is known more as a popular tourist destination. The Caribbean is truly beautiful and the country attracts not only for relaxing on the beaches but also for hiking in the mountains. Yet the state in the archipelago of the Greater Antilles should also be remembered as an exporter of extremely high-quality cocoa. It is appreciated by customers in the United States and leading Dutch chocolate manufacturers. A number of farms focus on the cultivation of Theobroma cacao trees under organic farming, which is a trend that is generally welcomed.

Cacao trees grow approximately to 8m in the wild, but on plantations workers keep them approximately at a height of a bush. They are usually harvested twice a year, when the yellow berries, up to 30cm long, ripen. Their white flesh contains 4-14 seeds, known as cocoa beans. These must be cleaned after removal, fermented for a few days and then dried. Cocoa is made from the beans by roasting, crushing and grinding. The resulting cocoa mass must then be separated into cocoa butter and cocoa powder. Both butter and powder have historically been highly valued. Cocoa beans were used by the Aztecs as currency, and a drink made from cocoa powder seasoned with spices was served at the courts of nobility. Paraguay is inland, which many experts say reduces its economic potential. The second-poorest South American country struggles with high unemployment, frequent strikes and instability. Agricultural production is the livelihood of around 45% of the population. The most common crops grown are soybeans and maize.

Sugarcane is another export commodity for Paraguay. It can reach up to 6m and its stalks can be up to 5cm in diameter and filled with pulp rich in sugar, which is harvested by ocal workers. This is done either manually with a machete, or a machine. The cane must be processed within 24 hours or it will spoil. After harvesting, the stalks are taken to a processing line where they are pressed to extract the juice. It is boiled to evaporate the water, and the resulting brown, sweet crystals are used as a sweetener – cane sugar.

Finally, we added natural flavoring. It is made in Europe and unlike synthetic flavorings, it comes from real plants. It is most often obtained by extraction. It does not contain any foreign compounds, does not cause heartburn or other discomforts.

This blend may contain milk residues so lactose intolerant people should consume carefully.

Instructions for preparation

Stir 30g of cocoa powder into 150ml of hot milk.
If you prefer a thicker consistency, mix cocoa powder with milk in 1:2 ratio.
