Origins
Panama Geisha Esmeralda couldn't have grown up anywhere else but in a place called Hacienda La Esmeralda. The family-run farm in the Boquete highlands of Panama's southwestern mountains is one of the most popular. Its success is due to Daniel Peterson, who rediscovered the rare variety of coffee and the unique natural conditions in which the somewhat strange coffee plants are grown.
The Jaramillo region is defined by its fertile volcanic soil, a microclimate with cooler temperatures and high humidity from the Atlantic and Pacific Oceans. The Hacienda La Esmeralda farm grows coffee on 50 hectares of sloped land. The Peterson family owns it. Rudolf Peterson founded the farm and it's currently managed by his grandson, Daniel.
The Peterson family has raised cattle and grown coffee on the hacienda since 1967. In 1996 they bought 50 hectares in the Jaramillo area because of the ideal conditions for growing coffee. Daniel Peterson was born in 1974 and took over responsibility for growing coffee on the family farm after studying in the USA. He succeeded in producing coffee with a floral aroma, fresh acidity, and silky aftertaste, winning one competition after another. It was customary on the farm to blend and process all the coffee beans together after harvest. But in 2002, Daniel realized that the fruit from about 3% of the coffee plants on his plantation had an extraordinary flavor and unique aroma.
He began selecting Geisha coffee trees, and it turned out he had chosen the best possible path. "Thee coffee world can consider itself lucky that this single piece of land, a small coffee farm in Jaramillo, Boquete, ended up in the Peterson family’s hands," says the Collaborative Coffee Source website. How Geisha, a native variety from Ethiopia, came to be in Central and South America is still a bit of a mystery. Unusually large coffee plants with shallow root systems and specific moisture and UV requirements produce relatively few coffee cherries. Their cultivation and harvesting are, therefore, very demanding. Nevertheless, they are worth paying attention to. After all, Geisha's flavor characteristics are impeccable.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
