This coffee is best described as simply beautiful. It has an extraordinary aroma, a round and balanced taste, and an amazing, smooth crema. What more could we want from coffee? The undertone is sweet caramel with a hint of lime and lemon. You'll also find layers of fragrant tobacco and leather.

Origins

Galapagos is an archipelago in the eastern Pacific Ocean, about 1,000km off the coast of Ecuador. It is particularly famous for its prehistoric-looking lizards, giant tortoises, and penguins. We'll add coffee to the list of Ecuador's wonders, since it is truly unique. 100% arabica is cultivated in an extremely favorable climate and volcanic soil. The coffee is grown without industrial fertilizers because the entire Galapagos is a unique natural area protected by strict regulations.

The coffee berries of Coffea Arabica are harvested very carefully and exclusively by hand. Throughout Ecuador, they are processed using both wet and dry methods. However, in the case of San Cristobal, farmers prefer the process that produces better quality beans –⁠⁠⁠⁠⁠⁠ the wet or washed method. The berries resemble cherries and are placed into water and pushed through crushing plates. These remove the pulp and extract two coffee beans from each berry.

The coffee is then fermented in fermentation tanks. Finally, it is sorted and dried. First in the sun, then by a machine. We import only green coffee. Roasting is a matter of a local custom –⁠⁠⁠⁠⁠⁠ coffee is roasted differently in Europe and in the USA –⁠⁠⁠⁠⁠⁠ and should only be done short before shipping. Only freshly roasted coffee will provide the expected delicate experience.


Flavour and aroma

More sparingly roasted coffee offers a richer and more complex flavour profile. It retains more authentic nuances specific to the growing region, including fruity, floral or nutty notes.

Health benefits

In particular, quality coffee roasted to its ideal profile may contain higher levels of antioxidants such as chlorogenic acid and other phenolic compounds. These substances have anti-inflammatory and antioxidant effects. Unroasted premium coffee is also gentler on the stomach, as it contains fewer acids that can irritate.

Plantation coffee is often grown with greater respect for the environment, with an emphasis on sustainable cultivation and fair trade, which can have a positive impact on growers and their communities.

Our quality aluminum packaging lacks any bold graphics, as we’d rather focus on the taste of our coffee. It always comes fresh thanks to degassing valve, which releases the gases that occur after roasting. Thanks to the hermetic seal, this container helps the contents further keep their freshness and protect them against humidity, light or foreign odors.

Instructions for preparation

Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
