Panamanian coffee grows on volcanic soils. It’s evident in the taste. It is characterized by a very good balance, a light acidity and a hint of hibiscus and citrus. The crema is smooth, light and cohesive.
Origins
Boquete, which appears in the name of this coffee, is a small town located in the westernmost Panamanian province of Chiriqui (about 60km from the border with Costa Rica). Thanks to its altitude of around 1200m, its climate is cooler. Because it abounds in beautiful scenery, whose landmarks include the nearby active volcano Baru and Panama's highest mountain (3 475m), it is a frequent tourist destination. The second reason to visit the Chiriqui region is the fantastic coffee, considered one of the best in the world. The place has become a second home to many North American and European retirees in recent years. It's even reported that up to 14% of the local population is foreign.
Volcanic ash enriches the soil of Chiriqui with minerals and nutrients, and the care of the farmers with love. Those looking for coffee plantations in the area will be successful in seconds. Absolutely everyone there knows someone who is making living by coffee. The citizens are proud of it – it's only through their pampering that Panamanian coffee has earned a worldwide reputation.
The name, of course, speaks volumes about the high quality of Chiriqui's coffee: SHG (strictly high grown) means it's grown at altitudes above 1,300m, so it matures more slowly and its flavor is fuller. EP (European Preparation) indicates that the green beans are sorted by hand. During this process, defective beans and foreign material are removed.
Boquete Indian Bar's Panama SHG EP coffee is wet-processed. After harvest, farmers pour the whole fruit into tanks of water where they wash it and separate the ripe fruit from the immature or defective ones. The cherries are then peeled in special machines and sent to fermentation tanks. They ferment for up to 36 hours, whereby natural chemical processes remove the sticky layers and parchment covering. Finally, the grain is dried, carefully sorted and packaged.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
