Don't go looking for foam in green coffee. Instead you can expect a mild and slightly sweet taste. It may remind you of green tea, or you also may recognize something of roasted coffee. In any case, green coffee is neither bitter nor strongly aromatic.

Origins

We source our green coffee from plantations in Central America. Firstly, because they produce high-quality coffee berries and also because their coffee is processed with the washed method. This process is very gentle on the coffee, resulting in undamaged beans that are free of parchment layers.

Coffee trees need a warm climate with stable temperatures to grow well. Because they thrive in areas around the equator, they are grown in lowlands but also in high altitudes. High-altitude coffee is one of the finest and therefore, the most expensive. Coffee trees are usually harvested throughout the growing season, with the fruit ripening between 9-14 months. On many plantations, harvesting is done by hand. Central American farmers choose what is known as the washed method to process their coffee. They pour the berries into water tanks and push them through special plates to remove the pulp. The loosened beans go into fermentation vessels, which ferment for up to 36 hours. The coffee is then dried either in direct sunlight, spread out on large concrete surfaces, or in dryers. Sometimes both methods are chosen - pre-drying in the sun and machine drying. The result is coffee beans with a moisture of 11-12%.

Green coffee is not roasted to retain the most beneficial nutrients as well as its natural aroma and flavor.

Green coffee benefits:

Unroasted coffee beans contain many more health benefits than its roasted counterpart. This is because they have not been subjected to high heat, so there is no decrease in antioxidants or caffeine content. The essential chemical for which green coffee is so popular is chlorogenic acid. Effects of chlorogenic acid, referred to as CGA are:

  • promoting breakdown of fats,
  • preventing the conversion of sugars to fats and flushing them from the body,
  • accelerating the burning process and promoting weight loss as well as reducing appetite

Caffeine in green coffee:

  • reduces fatigue and improves concentration,
  • contributes to mental and physical vitality;
  • relaxes muscles, relieves pain and stress and increases performance.

The ratio of CGA acid is 100,000mg/1kg. Green coffee has antibacterial properties, reducing the risk of diabetes and cardiovascular disease. Drinking green coffee also reduces feelings of hunger.

CAUTION: Green coffee beans are very hard and require a top-quality grinder to grind them. Green coffee can damage commercially available machines. Therefore, we grind the coffee only coarsely. We recommend preparing the beverage by simply pouring boiling water over the ground coffee or using a French press.

Instructions for preparation

Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water.
Steep for 5 minutes.
