The Peruvian highland coffee varieties are characterized by a slight sweetness, a balanced and layered flavor, and a trace of nuts and chocolate. Now imagine adding fresh blackcurrants and black cherries. This flavored coffee has a beautiful, elastic, fluffy crema with tiny bubbles.
Origins
When we run out of plantation coffee beans from Peru, we go to the Puno region to get them. It lies in the high Andes, within sight of the world's largest mountain lake, Lake Titicaca. Traditionally, Peruvian coffee has an excellent taste with a full body, which is why it is appreciated in Japan, Europe, and the USA. Its Typica variety is one of the staple arabicas, and although it has relatively low productivity, it is renowned for its high quality. Because of the difficult conditions they have in the high mountains, we can say that they keep their plantations in organic farming mode.
It is almost impossible and expensive to transport industrial fertilizers or even treatment sprays to them. The vast majority of the farmers cultivate small plots, so they pay close attention to their care and subsequent harvesting. The fruits of coffee plants, which look like cherries, are harvested several times in a row in Peru. The pickers go after them as they ripen. They carry them in large sacks to the roadside for processing.
This involves a method known as washing – the fruit is poured into water, pushed through special sheets (to get rid of the pulp), and fermented in fermentation tanks for up to 36 hours. They are then spread out in the sun and dried.
Flavoring or aromatization of coffee beans is a delicate matter. Our roaster uses carrier oils with natural aromas, which he applies to the beans before roasting. The coffee thus retains its aroma longer, which is reflected in the final taste.

If you intend to make flavored coffee in an automatic coffee maker with a tray, we recommend checking the instructions for the coffee maker to ensure this is possible. If the machine manufacturer does not provide any information on flavored coffee, follow these recommendations: The natural aroma in this coffee may react with the plastic in the tray and cause it to spot on prolonged contact.

Instructions for preparation
Grind your coffee according to your preferred method.
Use 14ml of water per 1g of coffee. For 1 cup of coffee use 7g.
Add your coffee and pour over with boiled water (95°C).
