That’s why Brazilian coffee is so often associated with balance, smooth body, and natural sweetness; qualities that are essential for premium instant coffee. If you want your cup to taste good even though all you’re adding is water, you need a raw material that’s pure and has a consistent taste.
Brazilian coffee beans are also characterized by a flavor that is based more on fullness and a pleasant sweet roundness than on sharp acidity. So it’s clear that even in the instant form, the drink has to be harmonious and balanced. It’s no coincidence that coffee from Brazilian plantations forms the basis of many espresso blends: it gives them body, a chocolate-nutty character, and a smooth aftertaste. And these are precisely the attributes that are beautifully transferred to freeze-dried coffee when processed gently.
However, the production process itself is also crucial. Freeze-drying is one of the most technologically demanding methods of producing instant coffee. First, a coffee extract is prepared; a foundation of highly concentrated coffee needs to be brewed. The result must then be quickly frozen and only then dehydrated in a vacuum chamber at very low temperatures. It’s important that the water is not evaporated using conventional heat, but is released under low pressure so that as many valuable aromatic substances as possible remain in the product. This’s why freeze-dried crystals typically have a more pronounced aroma and a richer taste than conventional instant coffees dried using hot air.
We’d also like to add that freeze-drying affects not only the taste, but also the texture and water-solubility. Thanks to the way the crystals are formed, the coffee dissolves well while retaining its character, including the full body that is often lacking in instant coffees. The resulting product is also stable during storage: the taste and aroma are retained for a longer time compared to its spray-dried counterpart.

Instructions for preparation
- For best experience use a 90ml cup.
- Add 1-2 teaspoons of coffee and pour over with boiled water warmed up to 90°C. Using boiling water may negatively affect taste.
