Thanks to this, the coffee cherries ripen evenly, giving farmers full control over their processing. The natural method allows the sweetness and body of the coffee bean to shine through.
Another distinctive feature of the region is its organizational structure. Unlike smaller, isolated areas, there is a well-developed system of cooperation between farmers, processors, and exporters.
