Origins
Grenada is an island with an interesting history and stunning nature. It was ""discovered"" by Christopher Columbus on his third voyage in 1498. The Spanish named it after the city of Granada, but no one settled there yet. In 1650, it was sold to France, but in 1763, Grenada fell to the British under the Treaty of Paris. From 1967, it had its own autonomy as a state associated with Great Britain, and in 1974, it declared independence. Nowadays, it’s a constitutional monarchy with the current British ruler as its official head, represented locally by a governor.
What about Grenada and cocoa trees? Although the country is famous for its sugar production and export, cocoa production surpassed it in the 19th century while in the 20th century, nutmeg took over. However, cocoa beans are still widely cultivated on this tropical island today. The vast majority of cocoa trees are of the Trinitario variety, with the rest being Forastero. Super-fertile volcanic soil and hot sun guarantee excellent conditions for growth and high fertility. Cocoa from Grenada has unusual depth and layered flavor. It’s used more for the production of dark chocolate, which allows its attractive tones to stand out.
As in most cocoa-producing countries, the cultivation and harvesting of cocoa trees (Theobroma cacao) is the work of small farmers working together in cooperatives. They’re guaranteed a fair purchase price and invest part of their revenues in social programs, education, and healthcare.
If you’ve ever read about how cocoa beans are processed, then you should know that Grenada is precisely the country where working women ""dance"" on them. Really. Once the large cocoa pods have been harvested, farmers remove the seeds and leave them to ferment for 2-8 days. They’re then spread out on large trays and dried in the sun. And that's when barefoot Grenadian women walk over the cracking cocoa beans. This removes the last remnants of pulp and polishes them beautifully. The beans that are ready for sale are called ‘crips’.
Cocoa beans are sold on the world market. The company that makes chocolate from them has to roast, crush, and grind them, which results in a cocoa mass, from which cocoa butter and cocoa powder are separated. By combining them again and adding a few other ingredients, they are transformed into a mass that needs to be further tempered, whipped, kneaded, emulsified... And at the end of this demanding process, you end up with a bar of chocolate or a handful of chocolate chips intended for further creative work.
Dark chocolate with a high cocoa content also has the advantage of being rich in substances that are beneficial to our health. We’re referring in particular to antioxidants, minerals, and vitamins. Thanks to their unique combination, cocoa is classified as a superfood. Astronauts even take chocolate with them on their trips to space. No one doubts the positive properties of chocolate – it helps maintain a good mood, contributes to mental well-being, and supports the body in fighting infectious and lifestyle diseases.
