Ecuador Cocoa Powder 22/24 has a premium and extremely intense flavor. You only need a little of it to make a beverage or a dessert. It adds that much-loved sweet and bitter taste and a delicate, warming aroma.

Origins

While Ecuador produces only 4% of the world's cocoa, it produces nearly three-quarters of the world's highest quality cocoa. This means that the vast majority of Ecuador's crops is top quality and disappears from the markets very quickly. Ecuadorian cocoa is used by some of the world's leading chocolate companies for their products.

Cacao trees (Theobroma cacao) grow mainly in the Mania, Los Rios and El Oro regions. They are evergreen trees that have been cultivated by humans for harvesting, since probably the 5th century. The coacao trees grow 5-8m, have long, dark green leaves and flower directly from the trunk. The fruit of the cacao tree is an elongated yellow berry with longitudinal grooves. Inside it, there are 4-14 seeds, the cocoa beans. Cacao trees are not easy to harvest. It requires a sharp machete and considerable strength.

The cocoa beans are processed by fermentation, after which they are dried in direct sunlight. The farmers roast the beans before sending them to the market. Only then can they be ground and pressed. The resulting mass is separated into cocoa butter and cocoa powder. Both raw materials are then used to make chocolate.

Cocoa is well known to contain healthy antioxidants that help the body cope with conditions such as high blood pressure, risk of heart attacks and depression.

Ecuador 22/24 Cocoa Powder is vegan. It contains 22-24% cocoa butter. There are no allergens, of course, unless you are allergic to cocoa.

Store at 12-20⁰C.
